Beef Jerky
Delicious snack, non-fattening with only 25 calories per slice and .2 carbohydrates per stick with a sugar substitute (using real sugar would be .6 carbohydrates per stick). When on the no carbohydrate diet use a sugar substitute (Equal or Sweet & Low).
Marinade for 2 lbs. of meat:
1/2 cup Teriyaki Sauce (2.7 carbohydrates)
2 tablespoons red wine- optional (0 carbohydrates)
1/2 teaspoon Liquid Smoke
1/4 teaspoon garlic salt
1/2 teaspoon black pepper or jalapeño pepper (or both)
1/2 teaspoon salt
1 tablespoon sugar* (12.5 carbohydrates)
*Don’t forget to use a sugar substitute if you are on no carbohydrate diet.
Cut the fat off the meat. Slice the meat thinly. Mix the marinade. Pour over the meat and cover. Let meat stand in the marinade for 12-24 hours refrigerated in a 9″ × 12″ glass pan.
Put pieces over the oven rack or on a cookie sheet with foil on the bottom so the marinade won’t drip in the oven. Dry for 30 minutes.
Turn the oven on to 180 degrees for 8 to 10 hours. Store the jerky in paper bags in the refrigerator or freezer.
